
Have you ever tried second fermenting your kefir? If you’re not familiar with it, you’re in for a treat! This simple step can take your kefir to the next level—enhancing the flavor and boosting the benefits. Once you try it, you might just fall in love with kefir all over again.
Once you’ve finished making your kefir (see the original Kefir post for steps) and removed the grains, it’s time for a second ferment. Pour the kefir into a clean jar, then peel an organic lemon or orange using a vegetable peeler—aim for one long strip of zest. Drop the peel into the jar and seal it with a lid.
Let the jar sit on your counter for anywhere from one hour to 24 hours, depending on how tangy or bubbly you like it. After that, pop it into the fridge—peel and all. When you’re ready to taste it, you’ll notice your kefir is smoother, creamier, and full of bright, citrusy flavor. It’s also more carbonated, giving it a light, refreshing fizz.
Second fermenting is definitely worth the wait—and you can get creative with it! Try adding a cinnamon stick, a splash of vanilla extract, or a few whole strawberries. The possibilities are endless. Enjoy!
